Copra Avocado Coconut Mayo Toast

AVOCADO TOAST W/ COCONUT MAYO

Serves 4

What you need

  • 1 cup of Copra organic coconut meat
  • 1/4 cup coconut oil
  • 1/4 cup olive oil
  • 2 teaspoons Dijon mustard
  • 1 tablespoon lemon juice
  • Generous pinch of sea salt 
  • Freshly ground pepper 

step by step

  1. Blend all ingredients until smooth. Refrigerate for four days. 
  2. Spread a few tablespoons of vegan mayonnaise on each bread slice. Add a few pinches of sea salt. Top with radishes, avocado, parsley, or microgreens.
