Coconut aioli

Coconut Aioli

sERVES 4-6

What you need

  • 1 cup Copra coconut meat
  • 1/2 cup  Copra coconut milk
  • 4 cloves garlic
  • 1/2 tsp Dijon mustard
  • 1 tsp lemon juice
  • 1 1/2 tsp salt 
  • Black pepper
  • Pinch of ground turmeric
  • Vegetables to serve, raw and/or steamed

step by step

  1. To make the aioli, combine the coconut meat, coconut milk, garlic, mustard, lemon juice, salt, turmeric, and a grind or two of black pepper in a high-speed blender. Process on high until smooth, about 1 minute, and the consistency of mayonnaise. If the mixture is too dry, add more coconut milk. 
  2. Top with turmeric powder.
  3. Cut and arrange the vegetables on a serving platter, with the aioli in a bowl on the side.
